Cucumber Lime Margarita Mocktail

This cucumber lime margarita mocktail is cool, crisp, and refreshing with fresh cucumber, lime juice, orange juice, and a fizzy sparkling water finish.

Ingredients

  • 1 medium cucumber, peeled and sliced, plus extra slices for garnish
  • 1/3 cup fresh lime juice
  • 1 tablespoon agave syrup or honey, plus more to taste
  • 1/2 cup orange juice
  • 1/2 cup sparkling water or soda of your choice
  • Ice cubes
  • Fresh mint leaves, optional, for garnish
  • Salt or sugar, optional, for rimming the glass

Instructions

  1. Rub a lime wedge around the rim of each glass, then dip the rim into salt or sugar if desired.
  2. Add the cucumber slices to a blender and blend until smooth.
  3. Strain the cucumber puree through a fine mesh sieve if you prefer a smoother drink.
  4. In a pitcher or shaker, combine the cucumber puree, lime juice, orange juice, and agave or honey.
  5. Stir well, then taste and add more sweetener if needed.
  6. Gently stir in the sparkling water.
  7. Fill prepared glasses with ice, then pour the mocktail over the top.
  8. Garnish with cucumber slices and fresh mint, then serve right away.

Notes

  • For the smoothest drink, strain the cucumber puree before mixing.
  • Add the sparkling water just before serving so the mocktail stays fizzy.
