These Christmas thin mint cookies are the easiest holiday treat you’ll ever make! They taste just like homemade Girl Scout Thin Mints — with a festive holiday twist.

Ingredients

  • 1 bag Andes Creme de Menthe Baking Chips (10 oz)
  • 2 sleeves Ritz Crackers (about 60 crackers)
  • Optional: crushed candy canes, holiday sprinkles, or white chocolate drizzle

Instructions

  1. Melt the mint chocolate: Place Andes chips in a microwave-safe bowl. Heat in 30-second bursts, stirring between each, until smooth.
  2. Dip the crackers: Set a Ritz cracker on a fork and dip into the melted chocolate to coat completely.
  3. Tap off excess: Lift the cracker and gently tap the fork so extra chocolate drips off. Place on a parchment-lined baking sheet.
  4. Decorate: While the coating is still soft, add sprinkles or crushed candy canes, or drizzle with white chocolate.
  5. Let them set: Allow cookies to harden 20–30 minutes at room temperature, or chill briefly to speed it up. Enjoy, serve, or package for gifting.
