Apple Slice Cookies (Fun Healthy Snack Idea)

These apple slice cookies are a fun and healthy no-bake snack made with fresh apples, creamy peanut butter, chocolate chips, coconut flakes, and walnuts. Ready in minutes, they’re perfect for lunchboxes, after-school snacks, and healthy desserts.



Ingredients

  • 4 apples
  • Lime juice, for soaking
  • 1/3 cup peanut butter
  • 1/4 cup chocolate chips
  • 1/4 cup sweetened coconut flakes
  • 1/4 cup chopped walnuts

Instructions

  1. Slice the apples into rounds, aiming for 3 to 4 slices per apple.
  2. Use the wide end of a piping tip to remove the core from each apple slice.
  3. Soak the apple slices in lime juice for a few minutes to help prevent browning.
  4. Pat the apple slices dry with paper towels.
  5. Spread peanut butter evenly over each apple slice.
  6. Top with chocolate chips, sweetened coconut flakes, chopped walnuts, or your favorite toppings.
  7. Serve immediately and enjoy.

Notes

  • Honeycrisp, Fuji, Gala, and Pink Lady apples work especially well.
  • Customize the toppings with raisins, granola, sunflower seeds, or dried fruit.
  • For the best texture, assemble the apple slice cookies shortly before serving.
