Air Fryer Sweet Potato Jackets with Greek Yogurt

Crispy air fryer sweet potato jackets with fluffy centers, seasoned skins, and a creamy Greek yogurt topping. An easy, healthy side or light meal made with simple pantry ingredients.

Ingredients

For the Sweet Potato

  • 1 medium sweet potato
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/3 teaspoon black pepper

For the Yogurt Topping

  • 1 cup plain Greek yogurt
  • 1 teaspoon dried basil
  • Extra salt and pepper to taste

Instructions

  1. Preheat air fryer to 400°F.
  2. Wash and dry the sweet potato. Pierce several times with a fork.
  3. Rub with olive oil, then season evenly with salt, paprika, and black pepper.
  4. Place in air fryer basket in a single layer. Cook for 30 to 40 minutes, until fork tender and skin is lightly crisp.
  5. Let cool for a few minutes. Slice in half lengthwise and gently fluff the inside with a fork.
  6. Stir dried basil into the Greek yogurt.
  7. Spoon yogurt over the sweet potato jackets. Garnish with extra salt, pepper, and basil if desired. Serve warm.

Notes

  • Cooking time may vary depending on the size of your sweet potato.
  • For extra crisp skin, do not overcrowd the air fryer basket.
  • Store leftovers without yogurt topping and reheat in the air fryer to restore texture.
