Description

Ingredients
For the Sweet Potato
- 1 medium sweet potato
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/3 teaspoon black pepper
For the Yogurt Topping
- 1 cup plain Greek yogurt
- 1 teaspoon dried basil
- Extra salt and pepper to taste
Instructions
- Preheat air fryer to 400°F.
- Wash and dry the sweet potato. Pierce several times with a fork.
- Rub with olive oil, then season evenly with salt, paprika, and black pepper.
- Place in air fryer basket in a single layer. Cook for 30 to 40 minutes, until fork tender and skin is lightly crisp.
- Let cool for a few minutes. Slice in half lengthwise and gently fluff the inside with a fork.
- Stir dried basil into the Greek yogurt.
- Spoon yogurt over the sweet potato jackets. Garnish with extra salt, pepper, and basil if desired. Serve warm.

- For extra crisp skin, do not overcrowd the air fryer basket.
