Ingredients

Units Scale
  • 2 ripe avocados
  • 1/2 cup unsweetened soy milk
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour, or gluten-free flour blend
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Halve the avocados, remove the pits, and peel. Slice each half into 8 wedges, depending on size.
  2. Place the flour in one shallow bowl and soy milk in a second shallow bowl. In a third bowl, combine the panko breadcrumbs with salt and pepper.
  3. Coat each avocado wedge in flour, shaking off excess. Dip into soy milk, then coat with seasoned panko breadcrumbs, pressing gently to help the crumbs stick.
  4. Arrange the breaded avocado wedges in a single layer in the air fryer basket. Cook in batches if needed.
  5. Air fry at 400°F (200°C) for 10–12 minutes, flipping halfway through, until golden brown and crispy.
  6. Serve immediately with your favorite dipping sauce.

Notes

  • Use ripe but firm avocados so they hold their shape.
  • Do not overcrowd the air fryer basket.
  • For a gluten-free version, use gluten-free flour and gluten-free panko breadcrumbs.
