A fun and festive Grinch poke cake. This easy, make-ahead Christmas dessert features bright red and green layers, perfect for holiday parties, potlucks, and family baking fun.
Ingredients
- 1 box white cake mix + ingredients from box (water, oil, eggs)
- Neon green gel food coloring
- 1 (3.4 oz.) box cheesecake instant pudding
- 2 cups + 2 tbsp milk, divided
- Red gel food coloring
- 1 cup unsalted butter, softened
- 4-5 cups powdered sugar
- 2 tsp vanilla extract
- Green sprinkles
- Jumbo heart sprinkles
Instructions
- Spray 9×13 pan; preheat oven to 350°F.
- Whisk cake mix + water, oil, eggs; tint green.
- Bake per box directions; cool completely.
- Poke holes 1 inch apart.
- Whisk pudding + 2 cups milk; tint red.
- Fill holes with pudding; chill 30 min.
- Beat butter until creamy; add vanilla & color, then sugar + milk until fluffy.
- Frost cake; top with sprinkles and heart sprinkles.
- Keep refrigerated until serving.
Notes
- Use gel food coloring for the brightest green shade.
- For clean slices, cut with a hot, dry knife between servings.
