Crumbl Coconut Lime Cookies


Description

Soft, thick Crumbl coconut lime cookies with a buttery texture and a bright lime frosting. These bakery-style cookies are easy to make at home and perfect for spring and summer baking.

For the Cookies

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1/4 cup oil
  • 1 egg
  • 1 tablespoon lime juice
  • 1 teaspoon coconut flavoring
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

For the Frosting

  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest

For Decorating

  • additional lime zest
  • lime wedges, optional

Instructions

  1. Preheat the oven. Preheat the oven to 350°F. Line a couple of baking sheets with parchment paper and set aside.
  2. Cream the butter and sugars. In the bowl of a stand mixer, combine the softened butter, sugar, and powdered sugar. Cream until smooth.
  3. Add the wet ingredients. Add the oil, egg, lime juice, and coconut flavoring. Mix well, scraping down the sides as needed.
  4. Add the dry ingredients. Add the flour, baking powder, and salt. Mix thoroughly, scraping down the sides often.
  5. Scoop and shape the cookies. Using a large ice cream scoop, divide the dough between the baking sheets. Gently flatten each ball to about 1/2 inch thick.
  6. Bake. Bake for 10 to 12 minutes, or until the centers are set. Do not allow the edges to brown. The bottoms should be just lightly golden.
  7. Cool completely. Let the cookies cool completely before frosting.
  8. Make the frosting. In the bowl of a stand mixer, combine the softened butter and powdered sugar. Mix on low until combined.
  9. Finish the frosting. Add the lime juice and lime zest. Mix on medium until smooth and fluffy, scraping down the sides often.
  10. Frost and decorate. Spread a thin layer of frosting over each cooled cookie. Sprinkle with additional lime zest and decorate with lime wedges if desired.

Notes

  • Do not overbake these cookies or they will lose their soft bakery-style texture.
  • Fresh lime zest gives the frosting the best flavor.
  • For thick cookies, use a large scoop and flatten the dough only slightly.
  • Store frosted cookies in an airtight container in the refrigerator if your kitchen is warm.
